High Amylose Starch

High amylose corn starch is a kind of resistant starch from special corn, natural raw material, high temperature resistant, non-transgenic, without chemical treatment.
Definitions and specifications
High amylose corn starch refers to corn starch with amylose content ≥50%. Starch molecules have two structures, amylose and amylopectin.
Amylose: it is a polysaccharide chain connected by a-(1,4) glucoside bond with D-glucose group. There are about 200 glucose groups in the molecule. The molecular weight is 1 ~ 2×105, the degree of polymerization is 990. Reacts with iodine in color and is blue.
Amylopectin: in addition to the sugar chain with a- (1,4) glycoside bond, there are branches connected by a- (1,6) glycoside bond in the molecule. The molecule contains 300 to 400 glucose groups, the molecular weight is >2×107, the degree of polymerization is 7200, and all branches are coiled into a spiral shape. The color reaction with iodine is reddish brown.
